Pomelo Squares

In the beginning I decided to make slight changes to the classical Swedish recipe”Mockarutor,” or cocoa squares as they would probably be called in English. In the end I changed pretty much everything you can change so I decided to name them Pomelo Squares since I use a lot of red Pomelo in them.

Oven temperature 175˚ Time: about 15 minutes

Cake Ingredients:

150 gram butter

3 eggs

2 deciliter sugar

2 teaspoons of baking soda

½ tablespoons of cocoa

5 deciliters of flour

2 teaspoons of vanilla sugar

1 ½ deciliter milk

5 tablespoons of squished red Pomelo juice. (You need 1-2 Pomelos)

1 tablespoon of chocolate sauce (recipe below)

How to make the icing:

Simply do everything in this recipe:


After its cold the other ingredients you will add to the icing are:

3 deciliters of powder sugar / icing sugar

2 teaspoons of vanilla sugar

25 grams of butter


  1. Start by melting the butter and afterwards let it cool down. At the same time make the chocolate sauce since it also needs to cool down.
  2. Whisk the eggs and the sugar properly.
  3. Add all the dry ingredients while simultaneously or semi- simultaneously adding the milk and whisk the content. (With dry ingredients I mean that you should exclude the Pomelo and the sauce).
  4. Add the red Pomelo juice you have made by squeezeing the Pomelos and then add the chocolate sauce.
  5. Pour the dough over an oven tray covered with baking paper. Start pouring in the middle and then use a spatula so you get an even layer. Make sure to save some tiny space around the edges of the tray since the layer will expand and might slightly expand on the width and the length.
  6. Put the tray into the lover parts of the oven in 175˚for about 15 minutes.
  7. Let it cool down to room temperature before you add the icing.

The Icing part:

  1. You the powder sugar, the vanilla sugar and 25 grams of melted butter and stir the content properly.
  2. Use the spatula to add an even layer of icing on the cake.
  3. Add your choice of sprinkles.
  4. Finally cut the cake into small squares and then you are done!
